How to rehydrate your Wonky Loaf Sourdough Starter
Simply rehydrate your dormant starter with water, add flour following the instructions provided, and watch it spring to life! With just a little care and feeding, you’ll have a bubbling, active culture ready to create bakery-quality sourdough at home.
What equipment is needed to rehydrate your sourdough starter?

Clean glass jar with lid
Rubber band to mark the level on your jar
Kitchen scales
Wonky Loaf Starter Flour (you can use any flour, but we recommend using the same flour we use to maintain the quality and liveliness of our starter)
Room temperature purified water
Mixing spoon
Step 1
Measure and Mix: In a clean jar combine 10g of dehydrated starter with 30g of room-temperature water, set aside for half an hour stirring occasionally until all the starter is dissolved, you will be left with a milky liquid. Now go straight to step 2
Step 3
Cover and Wait: Cover loosely with a lid and let it sit at room temperature (ideally 20–25°C) for about 12- 24 hours. put the elastic band around the level of the starter so it’s easy to observe any growth
Step 5
Second & Third Feedings: Add 70g of water and 70g of flour. Stir well put the band around the new level and let sit for another 12-24 hours. at this stage you will have 210g of starter. discard around half of it and feed the remainder again with 100g water and 100g flour
Step 2
First Feeding: Add 30g of flour Wonky Loaf starter flour or a good quality all purpose flour to the mixture and stir until combined. The consistency should be similar to pancake batter.
Step 4
Observe Activity: After 12-24 hours, check for bubbles or a slight rise, which indicates the starter is waking up. it’s normal not see any activity at this stage, don’t worry, she just needs another feed to get back to full throttle. either way after 24 hours move onto step 5.
Step 6
Repeat: Continue feeding the starter every 12-24 hours by discarding half and replenishing with 100g each of water and flour until it becomes consistently bubbly and doubles in size within 12 hrs of feeding. This typically takes 3-5 days.
